Meatloaf
Adapted from Ina Garten and Martha Stewart.
I almost always use a 50/50 ground beef/ground turkey mix for things like this. The beef flavor is strong enough to taste, and the turkey cuts down on the fat. You just have to make sure it gets cooked all the way through, no one wants undercooked turkey.
1. Saute one onion with salt, pepper and some thyme. Grate in one garlic clove
2. Off heat, add in Worcestershire Sauce, tomato paste, and chicken broth
3. Mix 1 egg, 1/2 pound ground beef and 1/2 pound ground turkey, 1/4 cup Italian bread crumbs
4. Add onion mixture
5. Form loaf
6. Cover with glaze (ketchup, dry mustard, brown sugar)
Bake at 350 for about an hour
Chicken Parmigiana
1. Dip chicken breasts in egg, the mix of seasoned breadcrumbs and parmesan
2. Brown in olive oil both sides in olive oil (2-3 minutes per side)
3. Top with tomato sauce and slices of mozzarella
4. Bake at 350 till chicken is done and cheese is melted (around 15 minutes)
I received the fundamentals of my education in school, but that was not enough. My real education, the superstructure, the details, the true architecture, I got out of the public library. For an impoverished child whose family could not afford to buy books, the library was the open door to wonder and achievement, and I can never be sufficiently grateful that I had the wit to charge through that door and make the most of it.
Now, when I read constantly about the way in which library funds are being cut and cut, I can only think that the door is closing and that American society has found one more way to destroy itself.”
